This manual was produced by the National Center for Home Food Preservation. Use free, online. Downloadable sections, also free. Print copies can be ordered from Purdue University Press. Copies from other sources may not be accurate or have safe processing times.

Pressure Canner Dial Gauges need to be tested annually or whenever they are dropped or bumped. Free testing is available at OSU Extension offices in Central Oregon: Crook, Deschutes, Jefferson, Warm Springs and Wheeler. Call ahead for an appointment or drop off the dial gauge or dial gauge with the pressure canner lid for testing and you'll get a call when it is ready to pick up.
