What can I plant in my garden for fall and winter harvest?

A:

Most greens and root crops can be planted between now (late July) and mid-August. Fruiting crops, such as tomatoes and peppers, require more direct sunlight and stronger intensity light than they can get late in the season. It would be best not to plant those.

Squashes and pumpkins are ideally planted in mid-May to early June for fall harvest. Read more about growing squashes in the publication Kabocha and Buttercup Squash for Western Oregon Gardens, OSU Extension

Fall and winter vegetables

Here are some vegetable recommendations for your garden:

  • Leafy greens such as lettuce, spinach, arugula and kale
  • Root vegetables such as beets, carrots and garlic
  • Brassicas such as cauliflower, broccoli, Brussels sprouts, bok choi, cabbage and collard greens
  • Winter herbs, such as parsley

Our monthly gardening calendars have additional information on what is ideal to plant in your garden each month.
